St. Agur is a double cream cheese, enriched with fresh cream and with a high butterfat content—it is sweet, reminiscent of buttermilk, with notes of vanilla, a mild mushroom aroma. With a relatively mild “blue” character, St. Agur is one of the first line options for those not yet sold on blue cheeses but hoping to be converted. It is neither funky nor earthy, with little saltiness and only a slight piquancy. St. Agur is best enjoyed with fresh fruits and warm nuts, spread on pumpernickel or other dense, sweet breads.
