Known for its flaxen to straw coloured interior, marbled throughout by a pale greenish-blue vein, and with a rustic, mottled crust—genuine Stilton can only be produced in the three counties of Nottinghamshire, Derbyshire, and Leicestershire. Stilton has a rich, well rounded flavour combining a pleasantly salty, sharp Cheddar-esque flesh with a robust blue vein. It boasts a complex flavour that wavers between pastoral earthiness and the yeasty sweetness of freshly baked bread. Stilton is a welcome standby for cheeseboards, with charcuterie, crumbled over salads, or on top of steak and burgers.
