From Dodington Dairy in Alnwick Northumbria, Cuddy’s cave is a close textured dales style cheese with undertones of citrus fruits. It is aged for 3-6 months and is mellow yet deceptively full flavoured with a lingeringly complex aftertaste. Made with unpasteurised milk and traditional rennet.
