A winter treat! A superb seasonal delicacy from the Massif du Mont D’Or in the Juram mountains in Switzerland close to the French border. The cheese is produced from winter milk and only generally available from October – February. AOC regulations (Appellation d’origine controlee) require the cheese to be produced by cattle grazing at 700m or higher. The cheese is wrapped in spruce bark which lends it a wonderful aroma and taste and should not be removed even when serving. Made with unpasteurised milk and traditional rennet.
